Снижение cодержания фитатов как средство биофортификации ячменя по минеральному cоставу зерна

Ключевой для организма животных и человека минерал фосфор в зерне злаков и бобовых культур на две трети (~65—85 %) общего содержания связан в форме фитиновой кислоты (фитатов) и недоступен для усвоения. Неусвоенный органический фосфор в форме фитатов, который выводится из организма с фекалиями, создает экологичес­кую проблему, прежде всего ухудшает качество питьевой воды. В статье приведены литературные данные по созданию генотипов основных зерновых культур и, в частности, ячменя с генетически контролируемым низким содержанием в зерне данного вещества. На культуре ячменя пока известно более 20 мутантов с низким со­держанием в зерне фитатов, представляющих не менее шести различных lpa-локусов, каждый из которых по-разному влияет на содержание в зерне органического и минерального фосфора. Показано, что селекция lpa-сортов этой культуры требует непременного использования специальных лабораторных методов контроля lpa-мутаций и оценки их эффектов в селекционных популяциях. Полученные данные подтвердили, что lpa-мутантные линии даже без предварительного селекционного отбора существенно не уступают линиям с аллелями дикого типа. Продемонстрировано, что создание зерновых злаков с низким содержанием в зерне фитатов открывает  принципиально другие возможности производства высококачественного мяса вместе со снижением загрязнения окружающей среды фосфатами. На основании анализа литературных источников, в которых изложены результаты исследований по кормлению животных разных видов  кормами с низкофитатным и обычным ячменем, установлено, что эффективность утилизации фосфора низкофитатного ячменя по сравнению с обычным зна­чительно выше. Кроме того, скармливание животным низкофитатного ячменя способствует снижению выбросов в окружающую среду неутилизируемых фосфатов с фекалиями, улучшает утилизацию мультивалентных катионов в кормах. Показано, что создание сортов низкофитатного ячменя на основе lpa-мутаций позволяет существенно улучшить эффективность усвоения (биодоступность) фосфора из зерна ячменя человеком и животными и снизить вредную нагрузку окружающей среды фосфатами.
