СЕМЕННАЯ ПРОДУКТИВНОСТЬ И БИОХИМИЧЕСКИЙ СОСТАВ ЗЕРНА ОЗИМОЙ СПЕЛЬТЫ И ПОЛБЫ В УСЛОВИЯХ ЮГА СТЕПНОЙ ЗОНЫ УКРАИНЫ

Определены морфометрические параметры, семенная продуктивность колоса, биохимический состав зерна (по содержанию крахмала, клетчатки, золы, жира, белка) коллекционных образцов пленчатых пшениц Triticum spelta L. (спельты) и T. dicoccum (Schrank) Schuebl. (полбы), выращенных в полевых условиях на юге степной зоны Украины. Представлена характеристика фракционного состава белка обоих видов пшениц. По количеству зерен в колосе и массе 1000 зерен выявлены отличия как между видами пшеницы, так и между опытными образцами одного вида. Наибольшие масса 1000 зерен и зерновая продуктивность колоса главного побега у спельты были выявлены для UA0300259. Наибольшая масса зерна колоса главного побега среди образцов двузернянки была характерна для UA0300087, что связано с наибольшими показателями у этого образца как количества зерен в колосе, так и массы 1000 зерен. Содержание крахмала в цельносмеленной муке зерна полбы составило 50—61 %, в зерне спельты — 49—55 % в зависимости от образца. Содержание липидов и клетчатки в цельносмеленной муке зерна спельты и полбы варьировало среди опытных образцов, а по содержанию золы достоверные отличия между образцами не выявлены. Содержание белка в цель­носмелен­ной муке зерна спельты составило 16,2—19,9 %, полбы — 14,0—22,6 % в зависимости от образца. Соотношение содержания глютенинов и глиадинов для спельты равнялось 1,1, для полбы — 0,7—1,4 в зависимости от образца. Согласно представленным данным, в условиях юга степной зоны Украины образец спельты UA0300259 и образец полбы UA0300087 сочетали наибольшую продуктивность колоса, высокую массу 1000 зерен и высокое содержание белка в зерне.
