Миксографический анализ теста из муки озимого тритикале

Проведен миксографический анализ теста из муки 12 сортов и сортообразцов озимого тритикале, выращенных в условиях Центрального региона Беларуси в 2013—2014 гг. Для сравнения использованы семена озимой и яровой пшеницы, озимой ржи. Оценена водопоглотительная способность муки и динамика вязкости теста при различных температурных режимах. Изучены корреляционные связи между физико-химическими и миксографическими показателями муки озимого тритикале и озимой пшеницы.
